Oolong, which means "black dragon" in Chinese, refers to a partly fermented tea made from the Camellia Sinensis plant. The freshly picked leaves are left out in the sun to wither and oxidise. Before complete oxidation takes place, the leaves are roasted at high temperature. This results in an excellent flavour and character, somewhere between black and green tea.
