Pu-erh leaves are re-hydrated after fermentation to give a second fermentation; they are called post fermented teas. After production they are stored in cool cellars or underground for one or more years. The dark to light brown leaf develops a strong, spicy and earthy taste, with longer brewing times an earthy and woody taste, with a dark brown, redish cup.
